Recipe Of The Week:

 

Oriental Eggplant Salad

1 lb. Eggplant

Salt

1/3 cup oil

1 tsp minced ginger

2 tsp minced garlic

1 Tb white vinegar

2 Tb soy sauce

1 Tb sesame seeds

2 chopped scallions

1/4 tsp hot pepper flakes

Peel and cut eggplant into 3/4 inch cubes, salt, let drain for 30 minutes (if you have received the long skinny Japanese eggplant this week you do not have to peel it or salt it first). Saute in oil until lightly brown. Mash together ginger, garlic and salt. Combine all and toss.


 

WhatÕs Going On?

Hello everyone. I apologize for the lack of a newsletter last week. This weekÕs newsletter is going to be short and sweet as well as I seem to not be able to make enough time for it these days now that my help has left the farm. I guess I will start writing the newsletter on Tuesday nights from now on since I do still have much to communicate with you about the fall.

 

What to Look Forward to.....

I hope to have more watermelon for members next week, as well as more canteloupe type melons. I am not sure how the next planting of green beans is going to fair but if they do okay we should see them soon. More basil, peppers, eggplant, tomatoes and cherry tomatoes as well as more installments of winter squash. Please let me know if you have any questions or comments. Elise.
